4-5 lbs. salmon
3/4 cup chopped onion
1/4 cup butter
1 1/3 cup cooked rice
1 cup chopped celery
1 cup sliced stuffed green olives
1 cup sliced seeded ripe olives
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon sage
1/4 teaspoon thyme
3 tablespoons lemon juice

 

Wash fish and dry inside and out with paper towels. Sprinkle inside with salt.
Mix all ingredients well and stuff fish. Place on oiled cookie sheet and baste fish with butter. Measure the thick part of fish and bake 10 minutes per inch or until fish flakes easily.
